Napoli Centrale Pizza Bar
Napoli Centrale is the name of the main train station in Naples, capital of Italy’s southern Campania region and the city that made pizza world-famous. It’s also the name of a ’70s band that mixed traditional Neapolitan music with rock and jazz, starting a musical movement called Naples power. Napoli Centrale, Newcastle, is helmed by a Neapolitan chef and musician, and is a tribute to both Naples and vera pizza (true pizza). We follow the same traditional Neapolitan pizza-making rules: we use Neapolitan flour, San Marzano tomatoes grown near Mount Vesuvius, and a wood-fired oven that was built by hand in Naples. Neapolitan pizza is made from yeast, water, flour and salt; it must be kneaded on a marble surface; and it is cooked for barely a minute or two at 450 degrees celsius. We do all that, too.
